7.1 ± 3.4℃である凍土利用貯蔵庫で 6ヶ月間および15ヶ月間貯蔵した時の種皮色に及ぼす影響および貯蔵した小豆から調製したこし餡色への影響について,冷凍貯蔵(-18.9 ± 1.6℃)及び室温貯蔵(24.9 ± 0.1℃)したものとの相違を明らかにすることを目的とした。紙袋および密封袋で6ヶ月および15ヶ月間貯蔵した小豆種皮の色の明度(L* 値)および彩度(C* 値)は,いずれの貯蔵条件においても貯蔵期間の長さに比例して低下したが,大豆および金時豆のそれらは貯蔵期間の長さに比例して上昇した。15ヶ月間室温貯蔵した小豆の種皮色の色差は1.95(紙袋)および2.02(密封袋),凍土利用貯蔵したそれらは 1.48(紙袋)および0.95(密封袋),冷凍貯蔵したそれらは0.96(紙袋)および 0.93(密封袋)であった。6ヶ月および15ヶ月間凍土利用貯蔵した小豆から調製したこし餡の色の明度(L* 値)および彩度(C* 値)は,貯蔵小豆の種皮色のそれらの値と同じ傾向を示し,貯蔵期間の長さに比例して低下した。15ヶ月間室温貯蔵した小豆から調製したこし餡の色差は7.54(紙袋)および7.05(密封袋)であり,凍土利用貯蔵した小豆から調製したそれらは7.27(紙袋)および
