8 月におこなった。キルギス移牧民の乳加工体系は,発酵乳系列群とクリーム分離系列群の乳加工技術を採用していた。発酵乳系列群の乳加工技術では,酸乳,チーズ,乳酒を,クリーム分離系列群の乳加工技術では,クリーム,バター・バターオイル,酸乳,自然発酵乳,チーズを加工していた。周辺地域の乳加工技術と比較分析した結果,キルギス移牧民の乳加工体系の特徴として以下の 2
