"黒毛和種骨格筋の複数の部位を用いてモノ不飽和脂肪酸(MUFA)割合の推移ならびに第6-7胸椎間ロース芯と他の骨格筋のMUFA割合の関連性について調査した.由来個体2頭の体細胞クローン牛5頭から6部位(半膜様筋,大腿四頭筋および大腿筋膜張筋,棘上筋,大腰筋,中臀筋および大腿二頭筋近位部,最長筋)を取り出し,頭側から2 cm間隔でスライスした.それらのスライス肉の筋断面の表面から脂肪サンプルを採取し,ガスクロマトグラフィーによって脂肪酸組成を分析した.MUFA割合の推移は骨格筋によって異なり,また由来個体によって影響されることが示された.由来個体および骨格筋にはMUFA割合に対して交互作用があり,由来個体によってMUFA割合が高くなりやすい部位が存在することが示唆された.第6-7胸椎間ロース芯と各骨格筋間の相関は非常に強く(r
