"本研究はサイコロ脂面積が枝肉格付形質,画像解析形質および枝肉単価に与える影響を調査することを目的とした.供試牛は,北海道内の枝肉市場に出荷された黒毛和種を用いた.サイコロ脂面積と枝肉格付形質との相関係数を性ごとに算出し,サイコロ脂面積が枝肉単価に与える影響を調査するため,牛脂肪交雑基準(BMS)ナンバーごとに分散分析を行った.サイコロ脂面積の平均値は,去勢は5.64cm2, メスは9.16cm2であり,その大きさには性差が認められた.サイコロ脂面積と枝肉重量およびばらの厚さとの性ごとの相関係数は,去勢でそれぞれ0.16,0.17,メスでそれぞれ0.27,0.26であり,増体に伴うサイコロ脂の入りやすさに性差が存在することが示唆された.サイコロ脂面積が12cm2を超えると枝肉単価は有意に低下し(P\u003c0.05),サイコロ脂面積の増加が枝肉単価の低下に繋がった.",
